Roasted Chicken with Cauliflower Fried Rice

Ingredients
  

Chicken Leg Quarters:

  • 4 chicken leg & thigh quarters
  • ½ tsp turmeric
  • salt
  • black pepper
  • ½ tsp olive oil

Cauliflower Fried Rice:

  • 1 cauliflower medium
  • 1 tsp coconut oil
  • 1 yellow onion small, diced
  • 1 piece ginger fresh minced (1" piece approx.)
  • 3 garlic cloves minced
  • 2 stalks celery diced
  • 1 cup snap peas
  • 1 cup peas
  • 1 tsp sesame oil
  • ½ jalapeno
  • 1 cup cilantro
  • 2 tsp sesame seeds
  • 1 lime

Instructions
 

  • Preheat the oven to 425 degrees.
  • Line the baking sheet with parchment paper.
  • Mix turmeric, salt and pepper with olive oil and brush the mixture on the chicken pieces.
  • Place the leg quarters on the parchment paper and roast for 45 mins to an hour.
  • Cauliflower Fried Rice:
  • Cut cauliflower into florets and place into food processor until it looks like rice texture. Use towel to ring moisture out of it.
  • Heat coconut oil in a pan and sauté the onion over medium-high heat until translucent. Add water or broth if onion is sticking.
  • Place ginger, garlic, celery, peas, and snap peas in the pan and cook for 5-7 minutes until veggies soften. Add the cauliflower rice, sesame oil, and sea salt. Mix well. Sauté for another 5-7 minutes until cauliflower rice is tender.
  • Top with jalapeno, fresh cilantro, sesame seeds, and a squeeze of lime juice.
