Ingredients

  • 3 lbs. boneless skinless chicken breasts, cut breasts in half
  • 1.5 cups coconut yogurt, So Delicious, unsweetened
  • 2-3 Tbsp. Thai red curry paste
  • 4 Tbsp. fresh cilantro, chopped
  • 1/2 cucumber, finely chopped
  • 1 Lime, cut into wedges
  • 6 cups salad greens

Instructions

  • Preheat oven to 375°f . Put the chicken in a shallow dish in one layer. Blend a third of the coconut yogurt, the curry paste, and three tablespoons of the cilantro. Season well with salt and pour over the chicken, turning the pieces until they are evenly coated. Leave for at least 10 minutes, or in the fridge overnight.
  • Place the chicken on a rack in a roasting pan and roast for 35-40 minutes, until golden. (if you would like to cook the chicken on the grill, reduce the cooking time to 25-30 minutes.)
  • Blend together the remaining yogurt and cilantro. Finely chop the cucumber and stir into the coconut yogurt mixture. Season. Garnish with wedges of lime. Serve with mixed salad greens.
