Recipes: 2 Simple Side Salads

If you are like me, you’ve got your protein down but need more veggies to go with your meals. Sometimes it’s nice to try something new, and not have the same old broccoli, green beans, or plain green salad. A little variety keeps it interesting, and helps to keep you on a good nutrition plan. Here are a couple simple, nutritious, low carb and extra delicious salad recipes from my client and chef, Elina Fuhrman.

Red Cabbage Salad

Try this simple take on a Red Cabbage Salad featuring black sesame seeds and sesame oil.
Course Salad, Side Dish
Servings 4
Calories 62 kcal

Ingredients
  

  • 1/2 red cabbage
  • 1 red onion, diced
  • 1 tsp sesame oil
  • 2 tsp black sesame seeds
  • 2/3 cup fresh parsley, chopped

Instructions
 

  • Dice the cabbage.
  • Add some salt and massage with hands.
  • Add diced onion.
  • Add sesame oil and sesame seeds, and massage again.
  • Serve with fresh parsley.

Daikon-Bok Choy Salad

This Daikon-Bok Choy Salad features white sesame seeds and sesame oil.

Ingredients
  

  • ½ daikon, medium
  • 2 bok choy
  • ½ white onion
  • 1 tsp apple cider vinegar
  • ½ tsp sesame oil
  • 1 tsp white sesame seeds
  • sea salt

Instructions
 

Instructions:

  • Julienne daikon.
  • Dice bok choy.
  • Combine veggies. Dress with apple cider vinegar, sesame oil and sesame seeds. Add salt to taste.
